Vanilla Scented Granola


I found this recipe on Recipezaar.com. I love that site, I get so many yummy recipes from them. I serve it on yougurt as in my picture, and ice cream. Totally yummy!!! I hope you enjoy!







Vanilla-Scented Granola Recipe #23108
Great snack for everyone, or the for kids lunches or even as an after school treat! Serve for breakfast with yogurt and fruit or over ice cream for dessert. Watch your time in the oven because sometimes it cooks a little quickly. This recipe came from Bon Appetit, March of 2002. A few baking tips I have learned from making this recipe often: I use a jelly roll pan so the granola will have maximum exposure while cooking. Also, if you do like your granola to clump, do not stir while baking. Allow to cool in pan for about 10 minutes or so, then run a spatula between granola and the pan to loosen. You will have so many clumps you will have to break them with your hands ; )

8 cups
· vegetable oil cooking spray
· 4 cups old fashioned oats
· 1 cup sliced almonds
· 1/2 cup golden brown sugar, packed
· 1/4 teaspoon salt
· 1/8 teaspoon ground cinnamon
· 1/3 cup vegetable oil
· 1/4 cup honey
· 2 tablespoons sugar
· 4 teaspoons vanilla extract
Position rack to middle of oven and preheat to 300*.
Lightly spray large baking sheet with nonstick spray.
Mix next 5 ingredients in large bowl.
combine oil, honey and sugar in small saucepan; bring to simmer over medium heat.
Remove from heat; stir in vanilla.
Pour hot liquid over oat mixture; stir well.
Using hands, toss mixture until thoroughly mixed.
Spread granola on prepared baking sheet.
Bake until golden brown, stirring occasionaly, about 30 minutes (but check after 20).
Transfer sheet to rack; cool granola completely.
(Can be made two weeks ahead. Store in airtight container at room temperature.) Makes about 8 cups.

Blue Monday


Sally, over at Smiling Sally is hosting Blue Monday. I would like to show you my blue item. It is a Nippon Hat Pin Holder. My husband bought this for me when we were out celebrating our 16th wedding anniversary. I have always wanted one. I think it is so pretty and my dear hubby was so sweet to buy it for me. It is a reproduction which I am not sure what that exactly means, so if anyone knows please feel free to leave me a comment telling me. Thanks! Now I just need some hat pins to put in it!

I made these muffins today...

And they were yummy!!!
Apple Strudel Muffins
In: 1 Hour Yields: 12 servings
INGREDIENTS:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 cups chopped apples

1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
DIRECTIONS:
1.
Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
2.
In a medium bowl, mix flour, baking powder, baking soda and salt.
3.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
4.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
5.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

And made Pioneer Woman's Cinnamon Rolls. They will put you in a diabetic coma, they are that good. I was kind of nervous because I can't work dough with a darn.. but as ugly as they started out they turned out really good!

Our little humble Christmas Tree
















I thought I would share a picture of our Christmas tree and some of the decorations on it that are special. Its part of a big tree, but it was way to big for our small living room so we made it just half the size. Savannah would be taller if it wasn't setting on a crate.. hehehe.






















I tried to get a better picture of this.. its my oldest son's xmas ornament from 1989. He is my oldest baby at 19. If you can't make it out it has little baby bottles and rattles on it.. very cute, but starting to fade. :(
















This is my Brandon's ornament he was born in 1993. I just couldn't pass up a little baby

Hey!

Hi everyone! I am sorry its been so long but I just haven't been in the blogging mood. Nothing new is happening around here and quite frankly I have been in quite a slump. Homeschooling is going well. We took the usual Thanksgiving break and now we are back at it. I had an endoscopy done yesterday because I have had chronic reflux for years and lately he Nexium is just not cutting it. The doc has me taking Reglan so my stomach empties faster. I had alot of bile in it on my exam and the doctor thinks that might be causing me to having the reflux. Anyway, we will see.. I hate meds but sometimes you gotta take them. I am missing my coffee tho... I love coffee but it is tearing my tummy up. So, hope everyone is doing great... drop a comment if you happen by, its always fun to get them!
