Vanilla Scented Granola

I found this recipe on Recipezaar.com. I love that site, I get so many yummy recipes from them. I serve it on yougurt as in my picture, and ice cream. Totally yummy!!! I hope you enjoy!

Vanilla-Scented Granola Recipe #23108
Great snack for everyone, or the for kids lunches or even as an after school treat! Serve for breakfast with yogurt and fruit or over ice cream for dessert. Watch your time in the oven because sometimes it cooks a little quickly. This recipe came from Bon Appetit, March of 2002. A few baking tips I have learned from making this recipe often: I use a jelly roll pan so the granola will have maximum exposure while cooking. Also, if you do like your granola to clump, do not stir while baking. Allow to cool in pan for about 10 minutes or so, then run a spatula between granola and the pan to loosen. You will have so many clumps you will have to break them with your hands ; )

8 cups
· vegetable oil cooking spray
· 4 cups old fashioned oats
· 1 cup sliced almonds
· 1/2 cup golden brown sugar, packed
· 1/4 teaspoon salt
· 1/8 teaspoon ground cinnamon
· 1/3 cup vegetable oil
· 1/4 cup honey
· 2 tablespoons sugar
· 4 teaspoons vanilla extract
Position rack to middle of oven and preheat to 300*.
Lightly spray large baking sheet with nonstick spray.
Mix next 5 ingredients in large bowl.
combine oil, honey and sugar in small saucepan; bring to simmer over medium heat.
Remove from heat; stir in vanilla.
Pour hot liquid over oat mixture; stir well.
Using hands, toss mixture until thoroughly mixed.
Spread granola on prepared baking sheet.
Bake until golden brown, stirring occasionaly, about 30 minutes (but check after 20).
Transfer sheet to rack; cool granola completely.
(Can be made two weeks ahead. Store in airtight container at room temperature.) Makes about 8 cups.

Blue Monday

Sally, over at Smiling Sally is hosting Blue Monday. I would like to show you my blue item. It is a Nippon Hat Pin Holder. My husband bought this for me when we were out celebrating our 16th wedding anniversary. I have always wanted one. I think it is so pretty and my dear hubby was so sweet to buy it for me. It is a reproduction which I am not sure what that exactly means, so if anyone knows please feel free to leave me a comment telling me. Thanks! Now I just need some hat pins to put in it!

Christmas 2008

I made these muffins today...

And they were yummy!!!
Apple Strudel Muffins
In: 1 Hour Yields: 12 servings
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 cups chopped apples

1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
In a medium bowl, mix flour, baking powder, baking soda and salt.
In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

And made Pioneer Woman's Cinnamon Rolls. They will put you in a diabetic coma, they are that good. I was kind of nervous because I can't work dough with a darn.. but as ugly as they started out they turned out really good!

Our little humble Christmas Tree

I thought I would share a picture of our Christmas tree and some of the decorations on it that are special. Its part of a big tree, but it was way to big for our small living room so we made it just half the size. Savannah would be taller if it wasn't setting on a crate.. hehehe.

I tried to get a better picture of this.. its my oldest son's xmas ornament from 1989. He is my oldest baby at 19. If you can't make it out it has little baby bottles and rattles on it.. very cute, but starting to fade. :(

This is my Brandon's ornament he was born in 1993. I just couldn't pass up a little baby

squirrel in a swing.

Hi everyone! I am sorry its been so long but I just haven't been in the blogging mood. Nothing new is happening around here and quite frankly I have been in quite a slump. Homeschooling is going well. We took the usual Thanksgiving break and now we are back at it. I had an endoscopy done yesterday because I have had chronic reflux for years and lately he Nexium is just not cutting it. The doc has me taking Reglan so my stomach empties faster. I had alot of bile in it on my exam and the doctor thinks that might be causing me to having the reflux. Anyway, we will see.. I hate meds but sometimes you gotta take them. I am missing my coffee tho... I love coffee but it is tearing my tummy up. So, hope everyone is doing great... drop a comment if you happen by, its always fun to get them!

Another day...

Le sigh! LOL! Oh its the end of the weekend already. And for me that means that I need to make a grocery list for the week. I don't know about you guys but groceries have grown in price so much here where I live. I detest grocery shopping! I try to save as much as I can with coupons etc. but its hard. I usually have the kids come up with a meal that they would like to have and that will take care of 3 days. Whats on your meal plan this week?

Savannah is having a good time working on her Mystery of History this year. I think its because she is having blast creating things for her timeline. I think its pretty cool myself.

Brandon is steadily working on his Sonlight, Chemistry and Algebra II. He is currently writing a newspaper that would be a representation of a one that was writtin in Coloniel times. I am, on the other hand, sipping my coffee and thinking about a grocery list..

Mystery of History

This year my daughter is doing Mystery of History for her history curriculum. This is great for a number of reasons.. first I got it for free because of a wonderful lady named Heather, she is letting us borrow it for this year. Secondly world history is wound together with Bible history, what a great and ingenious way to learn history, from where it started! My daughter finished the first lesson today. It was entitled "Creation" and it entailed the 7 days that God formed the Earth and Heavens.

Isn't this the cutest thing you've ever seen! LOL!!!! Great job Savannah!!

Haven't posted in forever..

To put it bluntly.. I just haven't felt like it. No, really.. I have been under the weather. I started my CPAP treatment about a month ago and was feeling great! Now, I am back to the doctor complaining again of facial swelling, some days it is so bad that when I take a picture of my myself that you cannot even see my ears! I was doing a "spa" night with my daughter and we took pictures of ourselves and I was just devastated at how I looked. I told my endocrinologist that something is up, that is not normal and she finally ordered a 24 hour urine test to look for cortisol, mine was of course high.. 133. Then I had to take another test where you take 2 dexamethosone tabs at 11 pm, then go in at 8:00 the next morning for a blood dry, while in a few days starting a saliva test. I am stressed and scared as I don't know what all this exactly means. I also have been have major abdominal bloating, pains, stomach aches.. so I need an appointment with my GYN to see if maybe I have more fibroids again. I am just worried about my health, you know I just want to be a mom and wife and have fun while homeschooling my children. Please say prayers for me to get better and all of this simply resolved, and for the doctors to have the knowledge to help me get better. Anyway.. we did get a field trip in last week to the Virginia Living Museum so I will follow up with pics of that. Sorry so down and out.

Vintage Thursday

Hello everyone! Its that time of week again for Vintage Thursday that to Confessions of an Apron Queen.

First up is a dresser that I got at a garage sale for only $30! What a find! I think I will someday replace the white knobs with some glass ones, how pretty that would be!

This is really not vintage I guess but I just wanted to share it. It is a Cathederal Window quilt that my mom made for me. I was 19 when I recieved it, she was sick with cancer and and barely had enough to finish it before she got really bad off. I have it hanging on a decorative curtain rod above my bed. It is all hand sewn. I love it!

There are bits of fabric from my clothes from when I was a little girl in it, as well as fabric from my mommy's.
Whenever I look at it, it tells me how much she loved me, with every stitch!

My mom always had this little figurine of a red haired girl in her bedroom. Whe she died, this was one of things I took that belonged to her. I think my mom liked it because her three daughters were redheads.

She has a crack right in the middle where she has been broken and glued. I love her! Maybe one day I can pass it onto my little red haired girl...


Okay so, Carmen over at Mom to the Screaming Masses was doing this over at her site and I thought it looked like something fun to do when your setting around with nothing else fun to do.. hehe so here is how you do it..

A little savings..

I had to go out to the doc's today and thought while I was out I would go by Target and see what kind of deals I could find that were listed over at Money Saving Mom. I found the following..

The only thing I had to pay for were the hamburger buns, which I needed for dinner tonight. Everything for 2 bucks and some change! Not a huge lot, but I will take anything that I can get for free.
Speaking of the doctor, he said that my anemia is gone! Whoo hoo! He is still concerned about what caused it in the first place, but I am just happy that that my iron supplements worked. Now I have eustation tube dysfunction, which we hope will cure with treatment of Sudafed. If not I will have to see a ENT doc about a possible tube insertion. I tell ya, the fun never ends around here.
I purchased Sonlight Core 100 for my son's homeschool course this fall. I have heard some great things about Sonlight, my son likes to read, so I decided to give it a try. It is very expensive IMHO, but its worth it if my son likes it, plus I can save it for my daughter. It is also highly resellable if they don't like it. Okay, I'm outta here.

I can't wait for sleep

So, I had my sleep study follow up today. The doc said that I have mild sleep apnea. I will be having a titration sleep study this Saturday to find out which CPAP mask will work best for me and at what pressure etc. Basically, the night of my sleep study I was asleep about 429 minutes but of those total minutes, I was woken up 200 some times because every time I would reach the dream state of sleep I would start snoring and wake myself up. The first hour I was asleep I was woken 29 times, just in that hour.. geez! Does that make sense? LOL, I'm tired. Also my Circandian Rythm is totally out of wack. So, he has prescribed me Rozerem. Hopefully by the last part of August (that is when my next FU is), I will be getting some kind of quality sleep.
In other news, my dh and dd went camping. DS and I went out Saturday night to swim and cookout.. Here are some pics my hubby took.

3 Favorite Things Contest!

Karen over at Between the Worlds is having a 3 Favorite Things contest. She is giving away a $10.00 Starbucks giftcard and I can feel a Caramel Frapaccino calling my name! This was a first full year of homeschooling, it was challenging yet very rewarding, I loved having my kids home with me where they belong. Okay so lets see if I can come up with 3 favorite things..

1. Teaching Textbooks Geometry. There is no way that I could have taught my son Geometry, this program is like a classroom, you hear your teacher and he teaches you on a virtual "chalkboard". The program comes with solutions as well so if your student is having trouble he can get help.

2. My public library. We all would be broke if we had to buy all the books we needed for reports, projects etc.

3. Lapbooking. This was totally up my daughters alley, as Lapbooking incorporates "arty" type work and my daughter is totally up for cutting things out, and coloring.

These are my gorgeous sunflowers! I just love how tall they get, and how beautiful they are. And we were enjoying them alot until..

Somone decided to hop our fence and cut them down.. I mean seriously, who does crap like this? I know it shouldn't really surprise me that this happened but still... WHATEVER!! I know they didn't fall off from the wind etc because they are nowhere to be found.,. seriously.. I was so mad! Humpf.. stupid people..

2. What is the last present you regifted? You would have to get presents to regift right? LOL, other then my hubby and kids I don't get gifts and I would never get rid of anything they give. me.

I love doing all sorts of crafts, I am usually not that good at them but my daughter and I have fun doing them. So when I stumbled upon this site and thought.. "I have to make these"! Sooo .. here are my finished results.

I think they are adorable. My daughter is doing some with her name on them, in cute little girly colors.. and I am doing a set for my cousin's baby with a Winnie the Pooh theme.

I also found these little garden markers at this site and made a few for the Square Foot Gardens.. Kelli has a beautiful website, but don't go there hungry because you will see so many goodies.. it will send you over the edge! Her Seasonal Delights ezine is packed full of all sorts of yummy and fun stuff.

The smoke from the Great Dismal Swamp fire is terrible here. I hope the wind shifts soon because whenever I go outside I get a headache. It is also hot out. I feel so bad for the people in Iowa with the flooding and tornadoes, boy they have gotten the short end of this stick this summer regarding the weather. Well, its almost 3:30 already so I guess I should get off of this thing and get something done around here.. or take a nap... no, I'd better get something done around here.. ::sigh:::
